From Snails to Escargots
10 easy steps

In the October 2020 issue of the NZ Gardener, Ruud Kleinpaste wrote
1. Go out, after dark, especially on a moist or foggy evening and take your torch.
2. Collect wach and every medium to large garden snail and dump them in a jar.
3. Drop in a slice or two of stale white bread - garlic bread is even better.
4. Let then chew on that for 4 to 5 days until their excrement turns white.
5. Put a large pot of water on the boil and chuck all the cleaned snails into the boiling water.
6. Simmer for only 4 to 5 minutes. Too long and they'll taste like rubber bands.
7. Take the snails out and leave to cool.
8. Remove the bodies from the shells with tweezers.
9. Fry the bodies for perhaps 3 to 4 minutes in some simple garlic butter.
10. Voila, they are now called escargots. Bon appetit !
